Born in Ingolstadt, Germany, Ernst Graupner was the third of six children born to Franz Graupner and Elsa Scharf. His early artistic development began at the Reuchlin-Gymnasium in Ingolstadt under the guidance of drawing teacher Wilhelm Krauß. From 1939 to 1944, Graupner pursued his studies at the Academy of Fine Arts in Munich, where he was taught by Hermann Kaspar and Julius Hess. It was during this period that he met Annemarie Baumgartner, a Swiss textile artist, whom he married in 1953. Following the war, he began working as a freelance artist in Munich. In 1953, he and his wife built an atelier house in Munich-Nymphenburg alongside architect Hans Maurer. He had one son, Stefan, born in 1954, and passed away in Munich in 1989.
